it is just different routings to the server
it was done to reduce the problem of the login server being DDOS'd
it doesn't really matter which you chose, and there is only one server
everyone plays together

One more noobish question. Is interacting and talking the same thing in this game? Because help says that the trainer might have quests for me, but only thing I get is skill trainer window when I use my interaction button.

that tooltip is a leftover from the original game....there are only very few quests in phoenix (as in traditional quests where you have to talk to people to take them) and they are endgame quests.
Just go around and kill things, type /task personal ingame and you will see a list of tasks that you can passively do while killing things.
Basically each mobtype, certain zones, etc... give you killcredit. For example killing an animal you will see a message that says you killed 1/15animals.
Once you kill all 15 you will get a reward (automatically, no need to go anywhere) and you will then have to kill a higher number of animals for the next reward. The reward always stays the same, but the amounts reset every day.

Wait until you start experiencing RVR, where the combatsystem starts to get really intresting.
