The suggestion is enable the razing of towers as is
Since the tower is either in tact or a flat of rubble, toggling the pathing nodes for one or the other is simple(tm).
Supposing it is just not possible to add/remove/change nodes when pathing is already in use you may still consider letting the towers be razed. The layout of the ground floor is close enough to the elevation of the rubble for basic pathing within the debris.
The foreseeable problems are:
1) pets will still run around the perimeter of the rubble and enter through the gate's position; likewise they will exit through the gate
2) pets on Stay/Here/Go or shrooms will remain at their locations even though they appear to be on the ground
3) groundassist I believe is tied to the pathing nodes
#2 is the only significant problem coming to mind where a nest of shrooms is in the air outside of melee range and potentially compounded with #3 would allow summoning new shrooms on a floating groundtarget.
I think even with those it is worth allowing towers to be razed supposing there are no other problems. Due to the size of keeps I am not suggesting that keeps be razed or walls collapsable.
