1- or 2-hander against evade/parry/shield?

I don't normally play melee, but I seem to recall there being bonuses and penalties when using 1- vs 2-handers against different types of defenses. As far as I can tell, 2-handers might work better against enemies who are relying on parry for defense? I'm not really sure of the specifics, though, or how exactly it works on Phoenix if it's any different from other servers, so...

Against enemy with high evade: 1- or 2-hander?
Against enemy with high parry: 1- or 2-hander?
Against enemy with high shield: 1- or 2-hander?

Relatedly, does duel wielding have bonuses/penalties against any of these three defense mechanics?

Afaik:
dualwield reduce evade and blocking by 25% (was 50% on live but is adjusted here)

2hand attacks reduce parry (%-reduction unknown to me)
